Here a list of best disco in Paris.
All of them open around 0h30. From 15 - 25 € per drink. Around 200€ for a bottle (ordering a bottle offers you access to a table). Doormens are very carefull about dress code.

Bars
- 33rd floor of Hotel Concorde Lafayette (Porte Maillot) - The most beautiful panoramic bar in Paris. 22€ for a drink, open unil 1AM. Just enter the hotel and reach the 33rd floor.
- Queenie (5, rue de Berri, 75008) - Very interesting bar, with a very good french cuisine and, very rare in Paris, you can eat until 2AM !

From my experience of clubbing I'd like to suggest that if there's a contingent that 'party hard' then gather yourselves together and contact a venue - you should be able to negotiate guest list, complimentary drinks on top of existing deal and probably a table to group around. Note that groups greater than 10-15 are difficult to cater for in most nightclubs and they'll start to ask for something upfront.
Ultimately, getting a guest list is the most important as it will ensure access for most - another word of caution... make sure you know the dress code as this is a key aspect of any doorman's policy - if you don't look the part do not expect to get in, Paris is no different to London, Tokyo or New York and perhaps more difficult for the more chic venues you may care to attend.
As Sun Tzu would say, make sure you've won before you've started ;-) Planning is key.

+1 for NikLp. I'd rather sit down in the middle of some overwhelmingly huge rich man's lawn and get pissed for a few euros than, err, wait. Never mind :P
If you seriously think people are going to pay hundreds of pounds/dollars/euros to get into the con, travel to it and stay in Paris and then pay forty euros for a half-filled glass of average wine, think again. Then think again for good measure.
I'm talkin' "le pique-nique" by the river or in the grounds of the Uni, or in the park across the road. Plenty of (good, cheap) booze can be consumed in this fashion! Weather permitting...
Looks like there is a dub/breaks/d&b night at Batofar on Wed. Sept. 2. which should be a great place to get the dance on.
Now if you REALLY want to dance, DJ Assault is at Rex on Thurs. Sept. 3!
The last time I was in Paris, I found a really great place with cheep beer on tap right on the Champs-Elysees... McDonalds. No really, I am being serious, a pint of beer is €2-3. Much cheaper than the €15 in many street-side cafes!
There are plenty of places where to go, last year I stayed in the Latin Quarter and there are some cheap bars. You can just go walking on Rue Mouffetard and choose which one you like.
Also if you are into clubbing, there are some very nice night clubs too, Rex and Batofar are the best ones. Local legends like Daft Punk or Laurent Garnier have played there.
Don't forget there's an editable map that could hold some suggestions. :)

As flupkear says, there are plenty of places in Paris that don't cost a fortune. I started jotting down some of the ones I know, but I'm up to about 3 pages, which is probably a bit long for a forum comment! Anyone have any better ideas - a Drupalcon Nightlife Wiki page, a drupal.org forum post? I could just add them to the shared Google map, but that doesn't give much room for comments...
By the way, I'd assumed Drupalcon would be a weeklong geek-fest with nobody straying far from their laptops, but this thread on clubbing seems to be the longest one on the forum, which is a good sign!
Just FYI for anyone following along at home, Rex is closed for August but reopens Jeudi 3 septembre, so would work for some weekend fun. At 10-15€ cover it is reasonable IMHO. Batofar is staying open all summer and in the same price range AFACT. Batofar is actually on a converted barge in the Seine and has really early start hours (like 7 pm early), which totally works for my lame, old ass. Will definitely like to check them both out. Yah, I'd like a place that just plays dance music (house/techno), has a floor and doesn't make me dress like a superstar to get in. I'm not into the "scene," I just want to dance my ass off. I'm fine with a reasonable cover and I mostly drink water when dancing (or I pass out from dehydration). If anyone knows of a place where a gang of Drupallers can just get on the dance floor and have a good time, please let me know.
There should be some good pubs and clubs that offer drinks for a few euros tops and charge no or very low entrance fees. Do we have any Paris-based Drupallers that can suggest such établissements?

I'm sorry, maybe I'm not in this class, but I find it a bit strange to suggest the most expensive and commercial bars on the Champs Élysée... We are an Open Source Community and not a fashion show of Giorgio Armani, are we?
I remember seeing there a bottle for €1300 and asked the doorman how many hours he has to work to earn it, and he said that it's not in hours, it is in weeks...
Cool local bars in Paris is not such an easy thing to find, definitely not if you want to drink beer (more expensive than wine), have some alternative ambiance, have the place open after 2AM or not pay too much. I saw places with a small Carlsberg for €14... On the Latin Quarter they'll take
Usually you have to look well. Don't dare to go to places near or around the Champs Élysée or more 'hip' places like Bario Latino. I find them disgusting, commercial and very very (you can't imagine how much) trashy.
There are quite a few such bars on Rue Oberkampf on the 11th district and some around Montmartre and the more alternative areas - for instance around Métro Château Rouge. The 20th district is also quite alternative.
I suggested those places for persons visiting paris for the very first time. It may be very *romantic* having a good drink looking over Paris by night and Effeil Tower from 33rd floor...
Then if you come at 5 friends having a 200e bottle is almost affordable and offers you an opportunity to spent a very cool night in Paris.
Of course I strongly suggest you to complete my list with other places, maybe more democratic.?
